About Pie, peach
Peach pie is one of the simpler fruit pies: ripe peaches, a little sugar, some thickener, and two layers of crust. The fat comes almost entirely from the pastry, protein is negligible, and fiber is low because the peach filling is mostly water and sugar once cooked. When made with good summer peaches the flavor justifies the crust, but commercially prepared versions often lose the brightness of fresh fruit in the process.
