Meijer Fat Free Sour Cream is a dairy-based cultured cream product sold under the Meijer private label, formulated to replicate the texture and tang of full-fat sour cream without any fat content. Achieving a satisfying fat-free sour cream requires a more complex stabilizer system than the full-fat version.
The base is cultured nonfat milk and milk. Food starch-modified and whey supplement the structure. Propylene glycol monoester (PGME) is a food-grade emulsifier derived from propylene glycol and fatty acids, used to improve texture and stability in fat-free dairy analogs. Sodium phosphate functions as an emulsifying salt. Agar, xanthan gum, cellulose gel, locust bean gum, and cellulose gum form a multi-hydrocolloid stabilizer matrix that simulates the viscosity and body of fat-containing sour cream. Artificial color is present — likely to provide a uniform bright white appearance. Vitamins A palmitate and D3 are added to compensate for fat-soluble vitamin loss.
