Kroger Fat Free Sour Cream is a nonfat cultured dairy product sold under The Kroger Co.'s core Kroger private-label line. Sour cream is traditionally produced by fermenting cream with lactic acid bacteria; in the fat-free version, milkfat is largely removed and a complex combination of stabilizers, thickeners, and emulsifiers is employed to replicate the creamy, viscous texture of full-fat sour cream.
Cultured skim milk and cream form the fermented dairy base, though both are asterisked to indicate they add only a trivial amount of fat, preserving the fat-free labeling. The extensive stabilizer system includes modified corn starch, cellulose gel, propylene glycol monoester (a mono-ester emulsifier), gum arabic, cultured dextrose (antimicrobial fermentation product), gelatin (animal-derived protein gelling agent — not suitable for vegetarians or vegans), titanium dioxide (whitening agent), cellulose gum, lactic acid, xanthan gum, and sodium citrate.
