Good & Gather Coconut Flour is a single-ingredient baking flour from Target's Good & Gather premium private label, consisting entirely of organic coconut. Coconut flour is produced by drying and finely grinding the defatted residual pulp left after coconut milk or coconut oil extraction from mature coconut flesh. The organic certification indicates the coconuts are grown without synthetic pesticides or fertilizers per USDA NOP standards.
Coconut flour is a grain-free, high-fiber alternative to wheat flour and has become popular in paleo, ketogenic, and gluten-free baking. It absorbs a significantly higher amount of liquid than wheat flour — typically recipes use roughly one-quarter to one-third the amount of coconut flour compared to all-purpose flour, with a corresponding increase in liquid and egg content to achieve cohesive texture.
