Good & Gather Coconut Flour is a single-ingredient baking flour from Target's Good & Gather premium private label, consisting entirely of organic coconut. Coconut flour is produced by drying and finely grinding the defatted residual pulp left after coconut milk or coconut oil extraction from mature coconut flesh. The organic certification indicates the coconuts are grown without synthetic pesticides or fertilizers per USDA NOP standards.

Coconut flour is a grain-free, high-fiber alternative to wheat flour and has become popular in paleo, ketogenic, and gluten-free baking.
