About ULTRA-PASTEURIZED HEAVY CREAM
Crowley Ultra-Pasteurized Heavy Cream is heavy whipping cream processed by UHT heat treatment for extended refrigerated shelf life, with carrageenan, mono and diglycerides, and polysorbate 80 added to stabilize whipping. A 15ml serving has 333 calories per 100ml and 33.33g fat. Crowley is an HP Hood brand serving the New England dairy market. The emulsifiers compensate for the partial denaturation of milk proteins caused by UHT processing to ensure the cream still whips to firm peaks.
