Simple Truth Organic Lowfat Cottage Cheese is a certified organic, reduced-fat cottage cheese from Kroger's premium organic sub-brand. The primary ingredient is organic cultured pasteurized nonfat milk, with organic milk and organic cream providing richness, and organic nonfat milk as a secondary dairy component. The stabilizer system uses organic locust bean gum and carrageenan to maintain the texture of the curd in the whey base. Tri-calcium phosphate, citric acid, and microbial rennet (rather than animal rennet) assist with curd formation and acidification. Carbon dioxide is used to maintain freshness — a modified atmosphere packaging technique common in premium cottage cheese. Vitamin A palmitate is added for fortification, and the product contains live and active cultures (L. acidophilus and Bifidobacterium bifidum) beyond the starter cultures.
