About HARD SALAMI

Kroger Hard Salami is a dry-cured charcuterie product from The Kroger Co.'s Kroger private label, produced in the traditional fermented and smoked style of American hard salami. This product is made from a blend of pork and beef, seasoned with salt, dextrose, flavorings, spice, and lactic acid starter culture, and finished with natural smoke flavor and sodium nitrite as a curing agent.

Lactic acid starter culture is the essential fermentation component that produces the characteristic tangy, slightly acidic flavor of dry-cured salami and simultaneously lowers the pH of the meat, inhibiting pathogen growth during the extended curing process. Sodium nitrite, combined with vitamin C in the form of sodium ascorbate, provides the characteristic pink-to-red color, acts as an additional antimicrobial, and contributes to the cured flavor. BHA (butylated hydroxyanisole) and BHT (butylated hydroxytoluene) are synthetic antioxidant preservatives used to prevent fat rancidity in cured and dried meat products with prolonged shelf life.
