Reiter's 1% low-fat cultured buttermilk is mostly nonfat milk with a small amount of cream, plus modified food starch and several stabilizers (locust bean gum, polysorbate 80, carrageenan) to smooth the texture. Low in fat, lightly tangy from the live cultures, with modest protein and a small natural carbohydrate load from the milk sugars. Vitamins A and D are added back. Works well in pancakes, marinades, and baked goods.
