About WATER CRESS
Watercress or land cress depending on the season, B&W packages whichever peppery green is available at harvest. Both are thin-stemmed cruciferous greens with a sharp, mustard-like bite and high water content. Very low in calories, modest fiber, and a reasonable protein contribution for a leafy green. Rich in vitamin K and C, along with glucosinolates common to the brassica family. Best used raw in salads, sandwiches, or as a garnish where its peppery intensity can contrast richer ingredients. Wilts quickly, so use within a day or two of opening.
