Gemelli, meaning "twins" in Italian, is a short pasta shape formed from two strands of pasta twisted together, creating a spiral form that holds sauces effectively in its crevices.
The sole ingredient is durum wheat semolina, which is the traditional and exclusively correct base for authentic Italian dried pasta under European Union protected standards. Durum wheat is a hard, high-protein wheat variety that produces semolina with strong gluten development, giving the pasta its characteristic firm bite and resistance to overcooking.
