About FRENCH BREAD
City Market French Bread is a baked bread product sold under The Kroger Co.'s City Market regional sub-brand, operated in Colorado and the Rocky Mountain region as part of the Kroger banner network. French bread is a long, crusty loaf of leavened wheat bread with a relatively open crumb and a firm crust, associated with French boulangerie traditions. This commercial version is made with enriched wheat and barley malt flour.
Enriched unbleached flour with barley malt is the primary ingredient, fortified with niacin, reduced iron, thiamine mononitrate, riboflavin, and folic acid. Water and yeast form the fermentation base. Minor ingredients at 2% or less include salt, high fructose corn syrup, soybean and/or canola oil, vital wheat gluten, corn starch, ascorbic acid, monocalcium phosphate, dextrose, sodium stearoyl lactylate, sodium chloride, ethoxylated mono- and diglycerides, ammonium sulfate, lactic acid, phosphoric acid, fungal enzymes, tricalcium phosphate, and multiple organic acid preservatives (propionic acid, sorbic acid, acetic acid). Soy lecithin is also present. The combination of propionic, sorbic, and acetic acids provides robust antimicrobial shelf-life protection.
