Haystack Mountain Double Cream Baby Brie is made from organic cultured pasteurized cow milk and organic cow cream, with salt and vegetable enzymes. Adding extra cream to the milk before culturing is what earns the double-cream designation, and it produces a noticeably richer, softer paste than standard brie. Fat is high and carbs are relatively elevated for a plain cheese, likely from residual lactose in the cream. The rind is soft and edible. Best served at room temperature, when the interior becomes almost spreadable.
