About CABOT, LIGHT SOUP CREAM
Cabot's light sour cream uses cultured milk rather than straight cream as its base, with modified corn starch, guar gum, carrageenan, and locust bean gum doing the work that fat would do in a full-fat version. The stabilizer system is noticeable in the texture - it's a bit thinner and tangier than regular sour cream and doesn't have quite the same body. Fat is substantially reduced, protein modest, and carbs slightly elevated from the milk solids and starch. Good as a lighter topping when you want the dairy tang without full cream richness.
