Dean's Ultra-Pasteurized Whipping Cream is heavy cream processed by UHT pasteurization for extended shelf life, with small amounts of mono and diglycerides, polysorbate 80, and carrageenan added to improve whipping stability. A 15ml serving has 300 calories per 100ml and 30g fat, with minimal carbs and no protein. Ultra-pasteurized cream whips slightly differently than fresh-pasteurized due to the heat treatment changing some milk proteins, but the emulsifier additives compensate to produce a stable whipped result.
