Canned golden hominy from Spartan, a McIlhenny Company store brand, made from prepared yellow corn processed using the nixtamalization method (alkali-treated), packed in water with salt. Sodium bisulfite is added to maintain the golden color. Per 100g: 56 kcal, 0.8g protein, 12g carbs, 0.4g fat, 0.8g fiber. Hominy is whole corn that has been treated with an alkaline solution (lime or lye), which softens the hull, gelatinizes the starch, and improves the amino acid profile by making niacin bioavailable. A staple ingredient in posole, grits, and traditional Central American and Mexican dishes. Naturally gluten-free. The golden color comes from yellow corn and is stabilized by the bisulfite.
