Heavy whipping cream is a high-milkfat dairy product typically containing at least 36 percent milkfat by FDA standards, and the combination of its fat content with gellan gum stabilization enables it to whip effectively and hold structure once whipped.
Gellan gum is a polysaccharide produced by microbial fermentation, used here at trace levels to stabilize the cream and maintain whipability.
