Kroger Heavy Whipping Cream is a standard heavy cream product from The Kroger Co.'s Kroger private label, containing cream, milk, carrageenan, mono and diglycerides, and polysorbate 80. Heavy whipping cream must contain a minimum of 36 percent milkfat per FDA standards to be labeled as such. The additives in this formulation — carrageenan, mono and diglycerides, and polysorbate 80 — serve as stabilizers and emulsifiers that improve whipability, stabilize the fat-in-water emulsion, and help the whipped product hold its structure over time.
Carrageenan is a seaweed-derived polysaccharide widely used in dairy products as a stabilizer. Its use in dairy has been the subject of ongoing debate among consumer advocacy groups, though it remains FDA-GRAS approved. Polysorbate 80 is a synthetic emulsifier also used as a whipping aid. Mono and diglycerides function as co-emulsifiers. These additives are present in trace quantities and do not materially affect the flavor of the product.
