Bakery Fresh Goodness German Chocolate Cake is a bakery-department ready-to-eat cake sold under The Kroger Co.'s Bakery Fresh Goodness sub-brand, which covers fresh-baked and semi-fresh cakes, pies, and pastries sold in the bakery section of Kroger-family stores. German chocolate cake is a layered chocolate cake traditionally topped with a coconut-pecan frosting.
The cake base uses bleached enriched wheat flour, sugar, water, soybean oil, eggs, and egg whites, with cocoa processed with alkali (Dutch-process) providing the chocolate character. Multiple emulsifiers — sorbitan monostearate, mono- and diglycerides, polysorbate 60, sodium stearoyl lactylate, and soy lecithin — are present for texture optimization. The chocolate icing contains partially hydrogenated soybean and cottonseed oil, which constitutes a source of artificial trans fats (partially hydrogenated oils, PHOs).
