Carnation Evaporated Milk is whole milk that has had roughly 60 percent of its water removed through gentle heating, resulting in a rich, slightly caramelized product with a longer shelf life than fresh milk. The addition of dipotassium phosphate prevents the protein from destabilizing, while carrageenan helps maintain a smooth, homogenous texture.
