Myzithra is a traditional Greek whey-and-milk cheese made from sheep's milk, soft when fresh and hard when dried and aged. The DPI version uses pasteurized sheep's milk with added whey, which is the characteristic production method. Fat is moderate, protein lower than most aged cheeses, and there is a small amount of carbohydrate from the whey. Fresh myzithra is mild and ricotta-like; dried myzithra grates over pasta in the way pecorino romano does, sharper and saltier.
