Neapolitan ice cream combines vanilla, chocolate, and strawberry flavors in a single container, traditionally in parallel stripes. This light version reduces fat compared to standard ice cream through the addition of whey protein concentrate and a stabilizer-heavy formulation while maintaining the tri-flavor profile with real strawberries.
Milk, sugar, skim milk, cream, corn syrup, strawberries, HFCS, whey protein concentrate, Dutch-process cocoa, and buttermilk form the primary components across the three flavor elements. Propylene glycol monoesters, guar gum, mono and diglycerides, cellulose gel, locust bean gum, corn starch, modified corn starch, cellulose gum, and carrageenan provide the emulsifier and stabilizer system. The three artificial colorants Red 3 (erythrosine), Blue 1, and Yellow 6 are present for the strawberry pink and other color elements. Vitamin A Palmitate is a standard fortification.
