Balsamic vinegar of Modena is a protected geographical indication (PGI) product from Emilia-Romagna, Italy, made from concentrated grape must combined with wine vinegar and aged in wooden barrels. The PGI designation distinguishes it from the more strictly controlled DOP Aceto Balsamico Tradizionale, which requires extended aging of twelve to twenty-five years. The characteristic sweet-tart flavor of balsamic vinegar comes from the natural sugars of concentrated grape must offset by acetic acid. In an emulsified vinaigrette format, lecithin or mustard acts as an emulsifier to suspend the oil and vinegar. This product contains no significant allergens in standard formulations but should be reviewed for sulfite content, as grape-based vinegars can contain naturally occurring sulfites.
