Atkinson's peanut brittle is built from cane sugar, peanuts, corn syrup, baking soda, and salt. That's the traditional formula - sugar crystallized with corn syrup, aerated slightly by the baking soda, with peanuts providing crunch and a little protein amid the dominant sugar and starch. No fiber, fat from the peanuts, carbs almost entirely from the sugar and syrup. Sweet, crunchy, and about as simple as candy gets.
