Shurfine Marshmallows are a standard confectionery product made from corn syrup, sugar, water, modified corn starch, gelatin, and natural and artificial flavor, with tetrasodium pyrophosphate and Blue 1 coloring. Tetrasodium pyrophosphate serves as an emulsifier that helps create the characteristic fluffy texture. Gelatin is the structural protein providing the marshmallow's elastic consistency.
