Bakery Fresh Goodness Lemon Cupcakes are a fresh-baked bakery item from The Kroger Co.'s Bakery Fresh Goodness line, sold at in-store bakery departments across Kroger Co. banner stores. The cupcake components include a lemon-flavored white cake layer using enriched bleached wheat flour, soybean oil, eggs, egg whites, nonfat milk, and a complex emulsifier system with sorbitan monostearate, mono- and diglycerides, polysorbate 60, and sodium stearoyl lactylate. Lemon puree made from lemon juice concentrate, pulp cells, and lemon oil adds authentic citrus flavor alongside lemon peel and corn syrup. Yellow 5 is used for color. The icing is a shortening-based frosting using interesterified soybean oil and hydrogenated cottonseed oil.
White chocolate disc decorations on top contain whole milk powder, nonfat dry milk, and soy lecithin, adding additional dairy and soy allergens. Additional flavor chips contain palm kernel oil, nonfat dry milk, and soy lecithin. Multiple dairy and soy sources make this a complex allergen product. Wheat and eggs are also confirmed allergens.
