Citric acid adjusts tartness, ascorbic acid adds vitamin C, and potassium metabisulfite is used as a preservative to maintain color and prevent oxidative browning. Potassium metabisulfite is a sulfite-based preservative and constitutes a sulfite allergen that must be declared when present at 10 ppm or more, as required under FASTER Act labeling guidelines.
