About ITALIAN STYLE MOZZARELLA LOW-MOISTURE PART-SKIM FINELY SHREDDED CHEESE, ITALIAN STYLE MOZZARELLA
Meijer Italian Style Mozzarella Low-Moisture Part-Skim Finely Shredded Cheese is a packaged shredded mozzarella sold under the Meijer brand at Meijer, Inc. supercenter stores across the Midwest. The ingredient list is minimal: cultured pasteurized reduced-fat milk, salt, enzymes, an anti-caking blend of potato starch and powdered cellulose, and natamycin as a natural mold inhibitor. Low-moisture part-skim mozzarella is produced by acidifying pasteurized reduced-fat milk, culturing it with bacteria, and pressing the curds to remove moisture to below 52% moisture content. This process creates a firm cheese with superior melting and browning characteristics compared to fresh mozzarella.
The product contains milk as its only allergen. It is free of wheat, eggs, soy, peanuts, tree nuts, sesame, fish, and shellfish, and is gluten-free. Natamycin is a naturally occurring antifungal compound produced by Streptomyces natalensis fermentation and is applied to the shredded surface to extend mold-free shelf life. Per 100 grams, this cheese provides 286 calories, 25 grams of protein, 7.14 grams of carbohydrates, and 21.43 grams of fat with no dietary fiber. A 28-gram serving delivers approximately 80 calories and 7 grams of protein. Low-moisture part-skim mozzarella is the most commonly used mozzarella variety for pizza, baked pasta, calzones, stromboli, and other applications where melt and browning performance are critical factors.
