Great Value Fudge Swirl Ice Cream is a premium-style ice cream from Walmart's Great Value brand, made with a full-fat dairy base of milk, cream, skim milk, and buttermilk, sweetened with sugar and corn syrup. The fudge swirl ribbon is a richer formulation than many budget ice creams, containing corn syrup, sugar, water, palm oil, two forms of alkalized cocoa (cocoa processed with alkali and unsweetened chocolate processed with alkali), pectin as a stabilizer, mono- and diglycerides, and polysorbate 80 as an emulsifier.
Stabilizers for the ice cream base include carob bean gum, tara gum, guar gum, carrageenan, cellulose gel, and cellulose gum — a comprehensive stabilizer blend that provides a smooth, creamy texture and resistance to ice crystal formation during temperature fluctuations.
