About CAJETA, MILK CARAMEL
Cow's milk slowly cooked down with sugar and glucose until it caramelizes into a thick, spreadable paste, cajeta is Mexico's version of dulce de leche. This jar adds bicarbonate for color development and potassium sorbate as a preservative. The result is almost entirely sugar and reduced milk solids, with minimal fat and protein relative to its sweetness. Spread on crepes, stirred into coffee, drizzled over ice cream, or eaten straight off a spoon, it is unapologetically rich and sweet.
