Good & Gather Balsamic Vinegar of Modena is a bottled Italian vinegar carrying the protected geographical indication (PGI) designation, produced from cooked grape must and wine vinegar in the Modena region of Emilia-Romagna, Italy. Good & Gather is Target's quality-focused private-label brand, and this balsamic vinegar is offered as an accessible everyday cooking vinegar that meets the PGI geographic and production standards. The product is suitable for use as a salad dressing base, glaze, reduction, marinade component, or finishing condiment.

Balsamic vinegar of Modena PGI contains at least 20 percent grape must by volume under EU production rules, combined with wine vinegar matured in wooden casks. The characteristic color, viscosity, and sweet-tart flavor come from the reduction and concentration of grape sugars during must cooking, followed by acetic acid fermentation. Good & Gather's clean-ingredient positioning encourages minimal additives; however, caramel color (Class IV sulfite ammonia caramel) is permitted and commonly used in PGI balsamic vinegar to standardize color across production batches. Sulfites from both grape must and caramel color may be present, which is relevant for individuals with sulfite intolerance.
